Recipe: Qabeli Palau

Description: Qabeli palau is an afghan dish that consists of rice with lamb meat garnished with carrots, raisins, pistachio and almonds

Number of servings: 6

Preparation time: 20 minutes

Cooking time:

  • Raisins and carrots – 10 minutes
  • Meat (Yakhni) – 20 minutes
  • Rice (Brenj) – 60 minutes

Ingredients:

- raisins and carrots: 250g raisins, 2 large carrots, 2 spoons of sugar, oil, (ground) cardomom

- meat: lamb meat (preferred amount), 2 teaspoons salt, one onion (medium), 2 garlic cloves, ground black pepper, saffron or ‘zucker couleur’( rang e deg).

- rice: long grain rice / basmati rice (1 glass p/p), water, 2 teaspoons of salt, oil, ground cumin, yakhni- juice

 
Recipe: Kichre Quroot

Description: Kichre quroot is an afghan dish made of rice with mung beans and small meatballs on top  

 Number of servings: 4

 Preparation time: 15 minutes

 Cooking time: 

  • meatballs : 20 minutes 
  • rice: 30 minutes

 Ingredients:

 - meatballs: ½ kg minced beef,  3 onions (medium), 3 garlic cloves, 1 teaspoon ground black pepper, 1 teaspoon ground cumin seeds (preferred amount). Optional : 1 egg.

 - rice: tea 3 glasses of rice (brenj e lok), 1 glass of mung beans, 2 L water, 1 teaspoon salt, cumin and black pepper, one union, oil.

 Preparation steps:

Step 1: Meatballs

  • Preparation

Peel two onions and garlic cloves, crush the garlic and grate the onions, you can use a cheese grater or a blender. Now add the onion and garlic to the meat and add salt, ground cumin and black pepper. You can also add an egg, but that’s optional.  Mix it altogether for a few minutes untill its smooth and sticky. Now make small balls out of the meat, the size of  the balls should be that of a wallnut. Once you’re done with the meatballs, you can make the sauce in which the meatballs will be cooked..
